It is time for meatless Monday, feel good about yourself, farm animals, and the environment.
Today’s Meatless Monday recipe is my signature dish. It’s fantastic in the taste department, but very simple to make and inexpensive. It’s the best tasting spaghetti sauce ever!
Jimmy’s Famous Marinara Sauce
2 – 28oz cans of crushed tomatoes
1 tsp. of crushed garlic
red onion (I use 3/4 of the onion)
¼ cup olive oil
crushed red pepper
grated black pepper
Heat olive oil in a large pan, add the red onion, after about 4 minutes add the garlic, after about 4 minutes add the tomatoes, approximately 5 shakes of the garlic salt and the red pepper flakes, and black pepper to taste (I use it liberally). Bring all the ingredients to a boil, stirring often. Once it comes to a boil, turn the heat down to simmer and cover. Cook for 30 to 45 minutes stirring often. Once your pasta is ready, turn the heat off of the sauce and add fresh basil (~10 to 15).
Spoon your fantastic marinara sauce over your pasta, add some grated parmesan cheese, and enjoy.
