Rice Milk Porridge with Berries/Sunday’s Meatless Monday Recipe

Today’s Meatless Monday Recipe comes from the Meatless Monday website.  Since school is starting for many, and schedules begin to change at this time of year, we thought this was the perfect time for a breakfast recipe to spice up your morning routine. 

We have not tried this recipe yet, but Jimmy is getting the rice milk and agave nectar from Trader Joe’s today (he gets to shop while he’s working) and we are planning to try this for breakfast tomorrow.  As always, we will report the findings :).

Rice Milk Porridge with Berries

The comfort of porridge gets a summer spin when topped with fresh berries. A dollop of yogurt, a sprinkling of cinnamon and a drizzle of honey completes this refreshing way to start your day. This recipe comes to us from Trudy of veggie.num.num.

Serves 2

For the porridge:

  • 1 cup wholegrain oats
  • 1½ cups rice milk
  • 1 cup water
  • 1 pinch salt
  • 1 tablespoon honey
  • or
  • 1 tablespoon maple syrup

To top the porridge:

  • extra rice milk
  • ½ cup fresh mixed berries
  • 2 tablespoons Greek yogurt
  • or
  • 2 tablespoons dairy free yogurt alternative
  • a sprinkle of cinnamon*

*optional

To make the porridge:

Combine the oats, rice milk, water and salt together in a large pot over medium-high heat. Bring to a boil.

Turn heat down to low and add the honey or maple syrup. Cook, stirring, for 3-5 minutes, or until the oats are soft and the porridge is thick and creamy.

To complete the rice milk porridge with berries:

Spoon the porridge into warm bowls, pour over extra rice milk to cover, top with fresh berries and a dollop of yogurt and a little ground cinnamon, if desired.

  1. Darla is at work, the semester for Wash U starts this week so she does advising all day today. I will be headed to TJ’s in about 45 minutes, so no exercise for us today, but that is okay because we needed a rest day. Yesterday was a great exercise day, we headed to Forest Park and walked the whole park, it took us 2 hours exactly, when we move from St. Louis one thing that I will miss is Forest Park.

  2. This recipe looks great..Greg ans I are hitiing the gym today..trying to lose a few for Robbie and Trisha’s wedding!!( This is because I know I will just gain it back with all the food and fun we have when we go there)

    Haven’t done much exercise today. Had to sit in the car and wait for Dad to take Dano for the walk. Going to the Dr. tomorrow to see if they can find out something on my foot.
