Oprah Goes Meatless/Black-eyed Pea & Jalapeno Soup Recipe

When Oprah goes meatless, people stand up and take note. In the few weeks since Oprah did a show on going vegetarian/vegan, there has been a wave, I would liken it to a Tsunami as compared to what we saw before, of people who are giving going meatless, even if only one day a week, a try.

The cows, chickens, pigs, fish, goats, sheep, all the creatures of the world can breathe of sigh of relief – Oprah is on their side. Thanks O!

Our Meatless Monday recipe today is…

Spicy Black-eyed Pea & Jalapeno Soup

2 T olive oil
2 cups chopped white onion
2 jalapeno peppers
1 habanera pepper or some combination of peppers to taste
28 oz can petite diced tomatoes with juice
1 T. garlic from jar
1 tsp salt
1 tsp pepper
4 ½ cups water
4 vegetable bouillon cubes
5 cups black-eye peas drained (buy 4 cans to get 5 cups) 

Tortillas
Tabasco
Cheese 

Sauté onion and garlic in olive oil on low until translucent – about 10 minutes.  Add peppers, tomatoes (with juice), salt, and pepper, and sauté.  Add water and bouillon cubes; stir to dissolve.  Add 5 cups black-eyed peas (without juice).  Heat through.  Sprinkle cheese on each serving.  Serve with torts and Tabasco.

  1. Thanks to everyone for your patience with my late posting today. We had another tornado event last night which resulted in a period of “being scared” (based on what happened to our hood on New Year’s Eve, plus the power went out (again) until 2am. I was only halfway through today’s post went the power went out and the rest is history :).

  2. I saw that Oprah was going meatless for a bit along with her entire staff how neat is that! I am still meatless…I tend to eat junk if i`m hungry where I would eat chicken before if I was hungry. So I definitely need to get better so I can be meatless and lose weight!

  3. That is pretty good post late or not. The soup sounds pretty good also, will give it a try.

    Heard you guys had another bout with tornados. I agree with Dana move away but come to my home, not to her home. Maybe we all could move to Hawaii or somewhere warm. Hope your night is better.
